Zucchini Parmesan Casserole
4 cups peeled zucchini, diced or chopped1 c Bisquick1/2 t oregano1/2 c oil1/2 c grated Parmesan cheese1/2 c chopped onion1/2 t garlic powdersalt & pepper to taste4 eggs, beaten2 t dried parsley2 T basilMix all together and bake in ungreased 2 quart casserole at 350 degrees for 40 minutes. Remove cover for last 15 minutes.
