Lemon Crumb Tilapia

4-6 tilapia fillets, thawed
1/4 c Italian seasoned breadcrumbs
2 T grated parmesan cheese
1 tsp garlic salt
1 tsp grated lemon zest
3 T butter (divided)
1 T vegetable oil
1-2 T lemon juice

Rinse fish and pat dry. Combine bread crumbs, parmesan cheese, garlic salt, and lemon peel on waxed paper. Melt 2 tablespoons butter. Dip fillets in melted butter. Coat fillet with crumb mixture. In nonstick skillet, melt remaining 1 tablespoon butter with oil over medium heat. Cook fillets for 2 to 4 minutes per side or until fish flakes easily. Sprinkle with lemon juice. When removing fish from skillet, use a spatula or the fish will fall apart.

Baja Fish Tacos


filets of white fish (cod, halibut, tilapia, orange roughy), cut in half lengthwise
lemon pepper seasoning, to taste
8 warm corn tortillas (wrap in towel and microwave)
shredded cabbage
Fresh salsa or pico de gallo
sour cream sauce

Heat a non-stick skillet with a small amount of oil. Dry the fish fillets then sprinkle with lemon pepper and pan fry about 3 minutes per side. Set aside and keep warm.

To serve, fold tortilla in half and layer with fish, cheese, sour cream sauce, salsa and cabbage.


Sour Cream Sauce

1 cup sour cream
hot pepper sauce to taste

Broiled Tilapia Parmesan

2 pounds tilapia filets

1/2 cup Parmesan cheese

1/4 cup butter, softened

3 tablespoons mayonnaise

2 tablespoons fresh lemon juice

1/4 teaspoon dried basil

1/4 teaspoon black pepper

1/8 teaspoon onion powder

1/8 teaspoon celery salt

Preheat your oven's broiler, and grease a broiling pan, or line with aluminum foil.

In a small bowl, mix together the Parmesan cheese, butter, mayonnaise, and lemon juice and season with dried basil, pepper, onion powder, and celery salt, mix well and set aside.

Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over, and broil for a couple more minutes.

Remove the fillets from the oven, and cover them with the Parmesan cheese mixture on the top side and broil for 2 more minutes, or until the topping is browned, and fish flakes easily with a fork. Be careful not to over cook the fish.
