2 tbsp sour cream
1 tsp fresh grated lemon peel
1 tsp lemon juice
1/8 tsp salt
1/8 tsp black pepper
2 cups cucumber, seeded and coarsley chopped
1/4 cup thinly sliced red onion, cut in half
1 tbsp chopped fresh mint leaves
Combine sour cream, lemon peel, lemon juice, salt and pepper in medium bowl. Stir in cucumber, red onion and mint. Cover; refrigerate at least 1 hour.
