2 cans corn, drained
3 avocados, cut into 1/2" pieces
2 pints grape tomatoes, halved
1/2 c red onion, finely diced
2 T olive oil
Juice of 2 large limes
Zest of 2 limes
1/2 c chopped fresh cilantro
salt & pepper to taste
Place corn in a large bowl. Add avocado, onion & tomatoes. In a separate bowl whisk together olive oil, lime juice, lime zest, cilantro, salt & pepper. Stir dressing into salad & refrigerate, covered, until served.
