1 t. oil (I use olive)
1/2 lb. turkey kielbasa sausage, cut into 1/2" cubes
1/3-1/2 c chopped onion
2 small carrots, chopped
1 stalk celery, chopped
4 c. chicken broth
15 oz. can pinto beans, drained and rinsed
10 oz. package frozen spinach, thawed and squeezed dry
Heat the oil in your soup pot. Add sausage and saute until lightly browned, about 3 minutes.
Add all remaining ingredients except spinach; bring to a boil.
Cover, reduce heat and simmer until veggies are tender, about 10 minutes.
Add spinach and continue to cook until heated through, about 2 minutes.
